Sciatt

Ingredients (doses for 4 people):

  • of buckwheat flour, fine
  • 200 g of white flour 00
  • 10 g of grappa
  • 30 cl of beer
  • a pinch of baking soda
  • 250 g of Valtellina Casera PDO cheese
  • Salt to taste.
  • frying oil to taste

 

Preparation

In a bowl, combine all the ingredients, except the cheese and the oil, which you will use for frying.
Knead everything until the dough is not too soft (it must be quite liquid), which you will leave to rest for about an hour and a half in the refrigerator.
In the meantime, cut the Valtellina Casera PDO cheese into cubes of about two centimeters on each side and dip them into the batter, previously left to rest.
With the help of a spoon, collect a cube of cheese at a time, making sure it is well covered with batter and drop it into the boiling oil, brought to a temperature of about 175 °.
Brown the sciatt and drain them with a slotted spoon.
